Prosciutto Rolls

Prosciutto Rolls

2 tablespoon extra virgin olive oil
2 teaspoons grated lemon zest
1 tablespoon fresh lemon juice
6 oz soft goat cheese, at room temperature
2 to 3 clove garlic, peeled and very finely minced
12 slices prosciutto (thin but not paper thin, halved crosswise,so you are halving the longest dimension)
1/2 cup fig preserves
1/2 bunche arugula, trimmed
freshly ground black pepper

1. Whisk oil, lemon zest and lemon juice together in a small bowl and set aside.

2. In a small bowl, mash together the goat cheese, garlic, and fig preserves with a fork and set aside.

3. Take about 2 tsp of the cheese mixture and shape into a small log. Place the cheese log on the end of the prosciutto slice. Place a few pieces of arugula on top of the cheese. The ends of the arugula should stick out of both ends slightly. Drizzle a few drops of the lemon mixture on top of the arugula. Season with a little black pepper to taste. Roll up the prosciutto around filling.

I have to say these were delicious...a really interesting mix of sweet and bitter, with the lemon adding a bit of "zing" and a nice texture provided by the arugula. Thumbs up.
